In many regions, carp is a symbol of prosperity and good fortune, making it a staple on holiday tables. The dish showcases the simplicity of frying fresh fish, resulting in a crispy exterior and tender meat. While carp is the classic choice, variations exist across Europe, with some opting for other freshwater fish, reflecting local preferences and availability.

Check the carp for any scales and remove them if necessary.
Marinate the carp by rubbing it with salt on both sides.
Peel and slice the onion, then cover the fish with onion slices from both sides.
Let the fish marinate in the fridge overnight or use lemon juice to marinate for 30 minutes.
Wash off the marinade with cold water and pat the fish dry with a paper towel.
Cut the carp into smaller pieces.
Prepare the breading station with one container of salted egg, one of all-purpose flour, and one of bread crumbs.
Preheat a large frying pan and melt clarified butter or oil in it.
Bread the fish pieces by coating them in flour, then egg, and finally bread crumbs.
Fry each piece in the pan for 3 to 4 minutes depending on thickness.
Place the pan-fried carp on a plate lined with paper towels to eliminate excess fat.
If preparing for a larger party, preheat the oven to 120° C and keep the fried carp warm until ready to serve.
