Start by preparing 7 pounds of beef or goat meat.

Gather the following spices: 5 dried guajillo chiles, 5 dried cascabel chiles, and 5 dried ancho chiles.

Chop half an onion, 6 tomatoes, and 8 garlic cloves.

Heat 1 tablespoon of cooking oil on a griddle.

You can either cook the chiles on the griddle for about 20 minutes, flipping them to cook evenly, or place them in an air fryer at 400°F for 4-5 minutes.

Remove the stems from the chiles and place them on a medium heat griddle until they start to smell, then move them to a pot with hot water and soak for about 10 minutes.

In a blender, add 1 cup of water, 1/2 cup of white vinegar, the soaked chiles, roasted tomatoes, chopped onion, garlic, and spices, then blend until pulverized.

Rinse the meat and place it in an Instant Pot, adding the blended mixture on top.

Cook in the Instant Pot using the meat and bean setting.

Once cooked, separate the meat from the broth and let the meat cool slightly before shredding it with a knife and fork.

Pass the broth through a sieve and place it in a pot, adding 8 cups of water to thin it out.

Add 1 tablespoon of salt and 1 tablespoon of oregano to the broth, stir, and let it boil for about 15 minutes, stirring occasionally.
