2 tablespoons white vinegar
1 liter of water
beef ribs (costilla de res)

Heat a pot with a little oil.

Add approximately 10 chopped tomatoes, 1 whole onion, and 10-12 garlic cloves to the pot.

Add 1 tablespoon of black pepper, 1 tablespoon of allspice, 1 teaspoon of ground cumin, 1.5 teaspoons of dried thyme, and 1.5 teaspoons of dried oregano.

Add less than half a stick of cinnamon.

Remove seeds and veins from 5 ancho chiles and 8 guajillo chiles, then add to the pot.

Mix everything for about 5 minutes to release flavors.

Add 2 tablespoons of white vinegar and 1 liter of water, then let it boil for another 5-10 minutes.

Blend the mixture with all the water until smooth, then strain it to remove solids.

Add the strained mixture back to the pot and season with salt.

Add the beef ribs to the pot, cover, and let it simmer on low heat for about 2.5 hours until tender.

Remove the meat from the broth and shred it.

Reheat the meat in a comal with reserved fat from the broth.

Warm 4 tortillas in the comal, add the shredded meat, and optionally top with cheese.
