Mexican Birria
Cultural Context
Originating from the state of Jalisco, Birria is a traditional Mexican dish made with marinated meat, often served at celebrations and family gatherings. It is known for its rich, complex flavors and is often enjoyed as a stew or in tacos. In recent years, Birria has gained popularity beyond Mexico, inspiring variations like Birria tacos, which are dipped in the flavorful broth before serving.

Cut 2 Romas tomatoes in half and add them to the pot.
Add 4 cloves of garlic to the pot.
Remove stems and seeds from 3 ancho chilies and add them to the pot.
Remove stems and seeds from 2 guilos chiles and add them to the pot.
Add a bay leaf to the pot.
Cover everything with water and let it simmer for 6-7 hours to rehydrate the peppers.
Slice 1 onion and create a bed of onions in the bottom of the crockpot.
Cube the meat (chuck roast) and place it on top of the onions.
Add cumin and salt to the meat, measuring with your heart.
Add 1 tablespoon of white vinegar to the pot.
Blend the contents of the pot after simmering for 10 minutes until smooth.
Pour the blended mixture over the meat in the crockpot.
Add enough beef broth to cover the meat.
Let the mixture cook in the crockpot for several hours until the meat is tender and can be shredded.
Once cooked, shred the meat with your hands and set it aside.
Dice some onion and cilantro for garnish.
Use carb-free tortillas to make tacos, or corn tortillas for a traditional option.
Fill the tortillas with shredded beef, diced onions, cheese, and a splash of lime juice.
Serve the tacos with the consmé from the crockpot.
