Egg Burger

2 large eggs
1 whole wheat burger bun
1 slice cheddar cheese
1/2 avocado, sliced
1/4 cup spinach leaves
1 tbsp mayonnaise
1 tsp olive oil
Salt to taste
Pepper to taste

Heat olive oil in a non-stick skillet over medium heat.

Crack the eggs into the skillet and season with salt and pepper.

Cook the eggs until the whites are set but the yolks are still runny, about 3-4 minutes.

While the eggs are cooking, toast the whole wheat burger bun until golden brown.

Once the eggs are done, place a slice of cheddar cheese on top of each egg and cover the skillet for 1 minute to melt the cheese.

Spread mayonnaise on the bottom half of the toasted bun.

Layer the spinach leaves on top of the mayonnaise.

Carefully place the cheesy eggs on top of the spinach.

Add sliced avocado on top of the eggs.

Top with the other half of the bun and serve immediately.
