Peruvian-Style Mahi Mahi

Take the mahi mahi fillets out of the fridge at least 20 minutes before cooking.
Cut a red onion into large stripes.
Cut two large tomatoes in half, deseed them, and cut into large stripes.
Crush two cloves of garlic with a garlic press.
Preheat a large pan over medium heat.
Season the mahi mahi with sea salt and black pepper, then cover it with all-purpose flour.
Add a generous amount of avocado oil to the pan and fry the mahi mahi for about 3 to 4 minutes per side until cooked to your liking.
Remove the mahi mahi from the pan and keep it warm.
Add the sliced onions to the pan and fry for a few minutes until they start to soften.
Add two tablespoons of aji amarillo and the crushed garlic to the pan and fry for another minute.
Add the tomatoes and a quarter cup of fish broth to the pan and let it simmer for a minute or two.
Add a splash of white wine vinegar, stir well, and serve the sauce over the mahi mahi.
