Toast 2 g of mustard seeds and 1 g of coriander seeds in a pan over high heat for 2-3 minutes.

Grind the toasted seeds in a coffee grinder until powdered.

Add 6 g of turmeric, 2 g of fenugreek, 2 g of ground cumin, 2 g of ground fennel, and 2 g of salt to the ground seeds and grind until fully powdered.

In a saucepan, add a drizzle of olive oil and sauté ½ chopped garlic and ½ chopped onion until golden, lightly salting.

Once golden, add 14 g of the Berlin curry, 7 g of paprika, 1 g of ground clove, and 1 g of ground cinnamon to the pan and stir for 1 minute.

Add 10 ml of apple cider vinegar, 260 g of ketchup, 50 g of tomato paste, 25 g of honey, and 75 ml of water to the pan and mix well.

Cook the mixture over low heat for 15 minutes, stirring occasionally, then blend until smooth to make the curry ketchup.

Peel and cut 4 Kennebec potatoes into desired shapes, optionally using a crinkle cutter.

Fry the potatoes in plenty of extra virgin olive oil, first at medium heat until tender, then increase to high heat to brown them to taste.

Once the potatoes are ready, drain them on paper towels and salt to taste.

Cook the German sausage on a grill with a few drops of oil until browned on all sides.

Slice the sausage into approximately 1 cm thick pieces.

Serve the sausage on cardboard trays with a generous amount of curry ketchup on top and a sprinkle of curry powder.

Serve a good handful of fries on the side, topped with mayonnaise.
