Black Bean Cakes

1 can (15 oz) black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup corn kernels (fresh or frozen)
1/4 cup chopped cilantro
1 tsp cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 egg (or flax egg for vegan option)
2 tbsp olive oil (for frying)

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Add breadcrumbs, onion, bell pepper, corn, cilantro, cumin, chili powder, garlic powder, salt, black pepper, and egg to the mashed beans. Mix until well combined.

Form the mixture into patties, about 1/2 inch thick.

Heat olive oil in a skillet over medium heat.

Add the patties to the skillet, cooking in batches if necessary, and fry for about 4-5 minutes on each side or until golden brown.

Remove the cakes from the skillet and place them on a paper towel to drain excess oil.

Serve warm with your choice of salsa, avocado, or a side salad.
