Black Bean Cakes

3 cans black beans
1 whole bell pepper
1 stalk celery
1 red onion
4 tablespoons butter
extra virgin olive oil
3 eggs
1 teaspoon salt
0.5 teaspoon pepper
1.5 tablespoons Cajun seasoning
2 heads lettuce
2 limes
mayonnaise
cayenne pepper
1 cup chopped cilantro
fresh breadcrumbs
canola oil
cornmeal

Chop one whole bell pepper, celery, red onion, and garlic.

Heat 4 tablespoons of butter and some extra virgin olive oil in a saute pan.

Drain and rinse one can of black beans and process until smooth in a food processor.

In a large bowl, combine the processed black beans with 2 cans of whole black beans, 3 eggs, salt, pepper, and Cajun seasoning.

Saute the chopped vegetables until soft and then add them to the bean mixture.

Prepare a chipotle lime sauce with the juice of 2 limes, mayonnaise, and cayenne pepper to taste.

Chop 2 heads of lettuce to serve as a bed for the cakes.

Add chopped cilantro and fresh breadcrumbs to the bean mixture and refrigerate for 20 minutes.

Preheat the oven to 400 degrees Fahrenheit.

Scoop the mixture using a half cup measuring spoon, coat in cornmeal, and pan-fry in canola oil until browned.

Transfer the browned cakes to a baking sheet sprinkled with cornmeal and bake in the oven for 10 minutes.
