Heat 2 tablespoons of oil in a frying pan.
Add 4-5 finely chopped garlic cloves and grated ginger; fry until garlic is browned.
Add 1 chicken breast cut into small pieces and fry until the color changes.
Add juice of 1/2 lemon to the chicken to keep it juicy.
Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper; mix well.
Cover and cook on high flame for 5 minutes until chicken is tender.
Stir and cook for an additional 3 minutes to dry excess moisture.
Remove the chicken from the pan and set aside.
In the same pan, add 1 cup of diced potatoes and fry until slightly golden.
Add 1 chopped onion and fry together for 2-3 minutes.
Sprinkle salt to taste and fry for another 5 minutes until soft.
Add 1/2 cup bell pepper, 1/2 cup tomatoes, and 2 tablespoons beans; mix well.
Season with black pepper and oregano; cook on high flame for 2-3 minutes until vegetables are soft.
In a bowl, crack 4 eggs and add chopped red and green chilies, chopped coriander, salt, and black pepper; beat until fluffy.
Add the cooked chicken and vegetables to the egg mixture; mix well.
Clean the pan and add 1/4 cup oil; heat on high flame.
Spread half of the egg mixture in the pan and place cheese slices on top.
Cover with the remaining egg mixture and sprinkle oregano on top.
Cover and cook on low flame for 6-7 minutes until set.
Carefully flip the omelette using a plate and cook the other side for another 6-7 minutes on low flame.
