Red Chili Powder 1tbs
Tamarind Pulp 3tbs

Hot Water 5cups

Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic and sauté for an additional minute until fragrant.

Stir in the cumin, coriander, cinnamon, salt, and black pepper. Cook for another minute to toast the spices.

Add the rinsed rice to the pot and stir to coat the rice with the oil and spices.

Pour in the water and bring to a boil. Once boiling, reduce the heat to low and cover the pot.

Let the rice simmer for about 15-20 minutes, or until all the water is absorbed and the rice is tender.

If using, stir in the raisins and slivered almonds during the last 5 minutes of cooking.

Remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.

Fluff the rice with a fork and garnish with fresh parsley before serving.
