1 cup cauliflower, riced
2 tablespoons coconut aminos
1 can black beans, drained and rinsed
1 teaspoon smoked paprika
1 teaspoon oregano
2 cloves garlic, minced
1/2 cup onion, diced
1/4 teaspoon cayenne pepper
1 medium sweet potato, peeled and diced
1/2 cup red onion, diced
1 avocado, sliced
1/4 cup cilantro, chopped
2 tablespoons hemp seeds
2 tablespoons lime juice
1 date, chopped
1/4 cup water

Cut cauliflower into bite-sized pieces.

Slice red onion and place in a bowl.

Peel and cut sweet potatoes for cooking.

Add coconut aminos, garlic, onion, oregano, smoked paprika, cayenne pepper, and onion granules to the cauliflower and red onion, mixing until coated.

Spread the seasoned cauliflower and red onion on a pan and roast in the oven.

Cook the sweet potatoes until tender.

Prepare the cilantro lime sauce by blending cilantro, hemp seeds, lime juice, a date, a clove of garlic, and water until smooth.
