Vegan Burritos

2 bell peppers
1/2 yellow onion
1 1/2 cups basmati rice
3 cups water
1 can black beans
1 small can whole kernel corn
1 cup chipotle salsa
2-3 tablespoons low sodium taco seasoning

Dice 2 bell peppers into bite-sized pieces.

Finely dice 1/2 yellow onion.

Heat a large pot or Dutch oven on medium heat and add 1-2 tablespoons of oil.

Add the diced onions and bell peppers to the pot and cook for 3-4 minutes.

Add 2-3 tablespoons of low sodium taco seasoning to the pot.

Stir in 1 1/2 cups of basmati rice, 3 cups of water, 1 can of black beans, 1 small can of whole kernel corn, and 1 cup of chipotle salsa.

Stir everything together and bring to a boil.

Cover and cook according to rice instructions for 15 minutes.

Once cooked, load the filling into wraps and roll them up, optionally adding TVP beef or cheese.

Wrap the burritos in foil for freezing.

To reheat, remove foil for microwave or keep foil on for oven heating; alternatively, use an air fryer for crisping after heating.
