Preheat oven to 425°F.
Take 1 to 2 whole unpeeled sweet potatoes and slice one piece off to create a flat edge.
Lay the sweet potato flat on a cutting board and slice into disks.
Cut across each disk to make sticks, then cut the sticks into diced cubes, aiming for 2.5 cups worth.
Transfer the diced sweet potatoes into a mixing bowl.
Add 0.5 teaspoons of cumin, 0.25 teaspoons of paprika, 1.5 teaspoons of chili powder, and 1 tablespoon of olive oil to the bowl.
Toss or mix to coat the potatoes with the spices.
Transfer the coated potatoes to a parchment-lined baking sheet.
Bake for 15 to 20 minutes, checking every 5 minutes after the first 10 until fork-tender.
Slice one half of a medium yellow onion and set the other half aside.
Remove the skin from the onion half being used and lay it flat on the board.
Cut carefully towards the root end without cutting all the way through, then cut down through the onion in parallel strokes to create strips.
Dice the onion by cutting across the strips.
Clean hands and cutting board with a mixture of dish soap and salt or sugar, or use lemon juice.
Put the diced onion in a bowl and set aside.
Add 2 tablespoons of neutral oil to a small to medium saucepan and place over medium heat.
Add one piece of onion to the pan; if it sizzles, add the rest of the onion and 0.5 teaspoons of salt.
Cook the onion until translucent and fragrant, about 5 to 7 minutes.
Add 1 clove minced garlic (or 1 to 1.5 teaspoons from a jar) and one diced jalapeno, along with 0.5 teaspoons of cumin.
Cook for an additional 2 minutes.
Add in one can of drained and rinsed black beans, mixing to heat through.
Add lime juice for extra zest right before serving.
Layer the beans and sweet potatoes onto your tortilla of choice and add toppings as desired.
