Introduce the dish and mention it can be made quickly and is great for lunch.
Use herring fillets that are not in oil, preferably with a smoky flavor.
If using herring in oil, soak it in milk for an hour to reduce saltiness.
In a bowl, add a good tablespoon of yogurt.
Add two tablespoons of mayonnaise to the yogurt.
Add a splash of sweetener and a bit of sugar to the mixture.
Add a tablespoon of cucumber brine to the mixture.
Stir the sauce ingredients together until well combined.
Peel and dice the apple into small cubes, adding it to the bowl.
Dice two or three cucumbers and add them to the bowl.
Chop the onion and add it to the mixture.
Cut the herring into bite-sized pieces and add it to the bowl.
Stir all the ingredients together until well mixed.
If the mixture is not creamy enough, add more cream or double the sauce amount.
Chill in the refrigerator for about 2 hours to let the flavors meld.
