Heat 2 cups of vegetable oil in a smaller pan until hot.
Slice 2 medium-sized onions into rings, making them as thick or thin as desired.
In a bowl, combine 2 cups of all-purpose flour, 2 teaspoons of potato slayer seasoning, 2 teaspoons of smoked paprika, and 1/2 teaspoon of black pepper. Mix well until the mixture turns a pink color from the paprika.
In another bowl, pour 1 cup of buttermilk and dip the onion rings in it, ensuring they are well coated.
Dredge the buttermilk-coated onion rings in the flour mixture, setting them aside individually.
Check if the oil is hot enough by dropping a small piece of onion in; it should sizzle.
Once the oil is ready, carefully add the onion rings in batches to the hot oil.
Fry the onion rings until golden brown, then remove them with a slotted spoon and place them on paper towels to drain excess oil.
Sprinkle with salt if desired and serve hot.
