Add 4 cups of vegetable broth into a saucepan and heat over medium-high heat.
In a large fry pan, heat 2 tablespoons of extra virgin olive oil over medium heat.
Finely dice 1 small onion and thinly slice 6 cloves of garlic.
Add the garlic and onion to the pan, mixing continuously to coat in olive oil and prevent browning.
After 3-4 minutes, when the onion is translucent and garlic is lightly sautéed, add 2 teaspoons of sweet smoked Spanish paprika and mix well.
Add 1/2 cup of tomato sauce and season with sea salt and freshly cracked black pepper; mix and simmer for a couple of minutes without stirring.
Once the tomato sauce has thickened after about 3 minutes, add 1 cup of Spanish round rice and lightly cook for 1-2 minutes while mixing continuously.
Pour in the simmering vegetable broth into the fry pan and cook the rice for about 15 minutes on medium heat, stirring every 1-2 minutes.
After 15 minutes, when most of the broth is absorbed but some remains, place a lid on the pan and remove from heat, letting it sit for 4-5 minutes to steam.
Finely grate 1/2 cup of Manchego cheese.
After 5 minutes, uncover the rice, add the grated cheese, and mix well to incorporate.
Transfer the rice to a serving dish and garnish with fresh parsley.
