Chicken Fajita Soup

5 bell peppers (2 green, 1 red, 1 orange, 1 yellow)
4 onions (2 red, 2 sweet or Vidalia)
1/4 cup vegetable oil
6 cups chicken broth
1 tablespoon Creole seasoning (Tony Chachere's)
1/2 cup Arosa Maria yellow rice

Slice 5 bell peppers into strips about 1/4 to 1/2 inch thick and place in a bowl.

Slice 4 onions into strips about 1/4 to 1/2 inch thick and add to the bowl with the peppers.

Add 1/4 cup vegetable oil to the Instant Pot and select the sauté function, heating for about 3 minutes.

Add the peppers and onions to the Instant Pot, filling it to the brim, and let them rest for 3 minutes without stirring.

After 3 minutes, stir the mixture gently with a wooden spatula to help it cook down.

Continue to sauté for 10 to 15 minutes, stirring occasionally, until the vegetables have reduced to about half their original size and have softened.

Add 6 cups of chicken broth to the pot and stir to combine with the vegetables.

Add 1 tablespoon of Creole seasoning and stir again to mix well.

Add 1/2 cup of Arosa Maria yellow rice to the pot and stir to incorporate.

Add 3 to 3.5 pounds of whole chicken breasts to the pot, ensuring they are submerged in the broth.
