Phyllo Pastry Bowls with Scrambled Eggs and Rainbow Trout

30ml (2 T) olive oil
4 spring onions, chopped
4 sheets of phyllo pastry
6 eggs
60ml (¼ c) milk
salt and pepper to taste
20ml (4 t) smooth cottage cheese, sour cream and chives flavour
100g smoked rainbow trout or mackerel
chopped chives for garnish
lemon wedges for serving

Preheat the oven to 200°C.

Spray 4 muffin cups in a muffin tray with cooking spray.

Heat the oil in a pan and stir fry the onion until soft. Keep aside.

Spray each of the pastry sheets with cooking spray, stack them on top of each other and cut into 4 blocks.

Take two sheets from one of the blocks and press in one muffin cup, sprinkle a quarter of the onion over and place the other two sheets from that block on top. Repeat with the rest of the pastry and onions.

Bake slowly for 10 minutes in the oven until golden brown and done. Let it cool in the pan.

Whisk the eggs and milk together, flavour with salt and pepper and pour into the pan. Stir until just done but still creamy and moist.

Share the scrambled egg between the pastry bowls, dish some cottage cheese on top of each, then a piece of fish and finish off with chopped chives.

Serve with lemon wedges.
