1

Dice the boneless ham steak and pulse it in a food processor until fine and crumbly.

2

Add coconut milk, eggs, dried parsley, onion powder, nutmeg, and 1 teaspoon of coconut flour to the food processor and blend until a moist dough forms.

3

Heat coconut oil or bacon fat in a 5-quart Dutch oven or cast iron skillet over high heat until approximately 2 inches deep.

4

Prepare croquetas by taking about 2 tablespoons of the ham paste, shaping it into a football shape, and breading it in the remaining coconut flour.

5

Let the croquetas sit for a bit to firm up before frying.

6

Once the oil is hot (bubbles when coconut flour is sprinkled), add 4-5 croquetas at a time to avoid overcrowding.

7

Deep fry for about 3-4 minutes on each side until golden brown.

8

If they start to fall apart, switch to a different pan and use vegetable oil for frying.
