Repeat the process until all tortillas are formed.
Cook the tortillas on a hot skillet until they are heated through and crispy on the outside, flipping carefully.
Prepare a sauce by boiling tree tomatoes for about 5 minutes until soft enough to blend.
Mix chopped red onion with salt to enhance the flavor of the sauce.
Blend the cooked tree tomatoes with the ají and water to achieve desired consistency.
Add chopped white onion, cilantro, and parsley to the sauce and mix well.
Cook beef strips in a skillet with oil, seasoning with salt, black pepper, and achiote.
Add sliced red onion, garlic, and seasonings to the beef while cooking.
Incorporate tomato paste and a bit of water to create a flavorful sauce with the beef.
Add diced tomatoes and green peppers to the beef mixture and cook until everything is well combined and aromatic.
Serve the tortillas with the beef and sauce.
