  • coconut oil
  • mustard seeds
  • cumin seeds
  • fenugreek seeds
  • dry red chilies
  • curry leaves
  • onion

  • ginger
  • turmeric powder
  • red chili powder
  • salt
  • water
  • coconut (grated)
  • fresh coriander

Instructions

  1. 1Soak tamarind in warm water for 15 minutes, then extract the juice.
  2. 2Peel and chop koyyapazha into bite-sized pieces.
  3. 3Heat coconut oil in a pan over medium heat until shimmering.
  4. 4Add mustard seeds and let them splutter.
  5. 5Stir in cumin seeds, fenugreek seeds, and dry red chilies until fragrant.
  6. 6Add curry leaves, chopped onion, garlic, and ginger; sauté until onions are translucent.
  7. 7Mix in turmeric powder and red chili powder; cook for 1-2 minutes.
  8. 8Add the koyyapazha pieces and sauté for 3-4 minutes until slightly tender.
  9. 9Pour in the tamarind juice and enough water to cover the vegetables.
  10. 10Season with salt and bring to a boil, then reduce heat and simmer for 15-20 minutes.
  11. 11Stir in grated coconut and cook for an additional 5 minutes.
  12. 12Garnish with fresh coriander before serving.

  7. 7Remove the rissoles from the skillet and set aside on a paper towel to drain excess oil.
  8. 8In the same skillet, add more olive oil if needed and sauté sliced mushrooms until browned, about 5-7 minutes.
  9. 9Add chopped onion to the mushrooms and cook until translucent, about 3-4 minutes.
  10. 10Pour in the vegetable broth and bring to a simmer, scraping up any browned bits from the skillet.
  11. 11Season the mushroom ragu with salt and black pepper to taste.
  12. 12Serve the rissoles topped with the mushroom ragu and garnish with fresh parsley.
