Nutritional yeast adds a cheesy flavor with fewer calories.
Heat a large non-stick fry pan over medium heat without adding any fat.
Thinly slice 6 cloves of garlic and finely chop a handful of fresh parsley.
Grate 1 cup (120 grams) of manchego cheese.
Rinse 9 extra large button mushrooms under cold water and spin dry in a salad spinner.
Pat the mushrooms dry with paper towels and slice them into 0.25 inch thick slices.
Drizzle 3 tablespoons of extra virgin olive oil into the hot pan and add the sliced garlic, stirring continuously until golden, about 1 minute.
Remove the garlic from the pan and set aside.
Add the sliced mushrooms to the pan, mixing to coat in the olive oil, then let them sit for 60 to 90 seconds without over-mixing.
After about 5 minutes, allow the mushrooms to cook on medium-high heat for 2 minutes without stirring to reabsorb the liquid.
Turn off the heat, add the sautéed garlic, 0.5 teaspoon of dried thyme, sea salt, and black pepper, and mix well.
Sprinkle the grated cheese evenly over the mushrooms and cover the pan with a lid to melt the cheese for a couple of minutes.
If the cheese doesn't melt, place the pan under a broiler for a few minutes until melted.
Remove the lid and garnish with chopped parsley before serving.
