Crack 6 large eggs into a large bowl and whisk vigorously for 1-2 minutes until light pale yellow.
Add 1/4 cup of cold water and whisk for another 1-2 minutes.
Add 2 tablespoons of chopped fresh parsley, sea salt, and freshly cracked black pepper, and whisk again.
Remove skins from 4 large cloves of garlic and thinly slice them.
Heat a large non-stick fry pan over low to low-medium heat.
Add 2 tablespoons of extra virgin olive oil and the sliced garlic to the pan, mixing continuously for about 3-4 minutes until fragrant but not browned.
Add the egg mixture to the pan and let it sit for 30 seconds to 1 minute without mixing to allow the eggs to slightly set.
Push the egg mixture from the outer edges towards the center, tilting the pan to allow runny egg to fill the empty parts.
Continue this technique until there is virtually no more runny egg left, then turn off the heat and mix for another 30 seconds until just cooked through.
Transfer the scrambled eggs to a serving dish and grate Manchego cheese over the top, garnishing with fresh parsley.
