Clean the sardines by removing the intestines and any unwanted parts.
Rub salt on the cleaned sardines.
Cut the sardines in half.
Slice one onion and four cloves of garlic.
Slice 140g of baby carrots in half.
Cut 55g of red bell peppers into strips.
Slice around 60g of green olives (about 10 pieces).
Slice around 50g of pickles (about 2 pieces).
Cut 12g of ginger into strips.
Add five to six pieces of dried bay leaves and a teaspoon of dried chilies.
Add a teaspoon of whole black pepper (about seven pieces).
In a pressure cooker pot, layer half of the sliced onions, half of the sliced garlic, and half of the sliced carrots at the bottom.
Add some dried chilies and red bell peppers on top of the first layer.
Add four pieces of dried bay leaves and half of the ginger strips.
Add half of the black pepper and half of the crushed chilies.
Spread a few slices of pickles and a few pieces of olives on top.
Place the sardines in a single layer in the pot.
Sprinkle salt over the sardines, being cautious not to add too much since the fish already has some salt.
Layer the remaining ingredients over the sardines: the rest of the carrots, peppers, bay leaves, ginger, crushed chilies, black pepper, olives, and pickles.
Measure and pour two cups of olive oil into the pot, ensuring it covers the sardines.
Seal the pressure cooker and set it to the fish setting for 35 to 40 minutes, checking the instructions for your specific pressure cooker.
After cooking, transfer the sardines to sterilized jars for storage, which can last at room temperature for a few months.
