Modan Yaki

1/2 cabbage
3 sticks green onion
15cm yamaimo (yam)
3 eggs
4g dashi powder (Ajinomoto Hondashi)
45g flour
60g tenkasu (tempura bits)
Some sliced pork belly
2 packs yakisoba noodles
50~60cc yakisoba sauce
Some okonomiyaki sauce
Some mayonnaise
Some Katsuobushi (bonito flakes)
Some Aonori

Chop the cabbage and green onion.

Grate the yamaimo (yam).

In a bowl, mix the chopped cabbage, green onion, grated yamaimo, eggs, dashi powder, flour, and tenkasu to form the batter.

In a separate pan, cook the sliced pork belly until browned.

Add the yakisoba noodles to the pan and stir-fry with yakisoba sauce.

In a hot skillet, pour some batter and place the cooked yakisoba on top, then cover with more batter.

Cook until golden brown on both sides, then serve with okonomiyaki sauce, mayonnaise, katsuobushi, and aonori.
