1/2 tsp salt
1/2 cup unsalted butter, chilled and cubed
4-5 tbsp cold water
1 cup grated cheese (cheddar or your choice)
1 medium onion, finely chopped
1 tbsp olive oil
1/2 tsp black pepper
1/2 tsp dried thyme
1 egg, beaten (for egg wash)

Preheat the oven to 400°F (200°C).

In a large bowl, mix the flour and salt together.

Add the chilled butter to the flour mixture and rub it in with your fingers until it resembles breadcrumbs.

Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork it.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

In a skillet, heat olive oil over medium heat and sauté the chopped onion until soft and translucent, about 5 minutes.

In a bowl, combine the sautéed onion, grated cheese, black pepper, and dried thyme. Mix well.

Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into circles (about 6 inches in diameter).

Place a spoonful of the cheese and onion mixture on one half of each circle, leaving a border.

Fold the dough over to create a half-moon shape and press the edges to seal. Crimp with a fork for a decorative edge.

Place the pasties on a baking sheet lined with parchment paper. Brush the tops with beaten egg.

Bake in the preheated oven for 25-30 minutes or until golden brown.
