- 3Spread hummus on top of the avocado on one slice of bread.
- 4Layer the cucumber slices on top of the hummus.
- 5Add the tomato slices on top of the cucumber.
- 6Sprinkle the red onion slices over the tomatoes.
- 7Add the spinach leaves on top of the onions.
- 8Drizzle olive oil over the vegetables and season with salt and pepper.
- 9Top with the second slice of bread, avocado side down.
- 10Cut the sandwich in half and serve immediately.
