Heat a large fry pan over medium heat and add 3 tbsp of extra virgin olive oil.
Roughly chop 1 medium onion and 5 cloves of garlic and add them to the hot fry pan, mixing to coat in olive oil.
Cut 1 medium potato into small bite-sized pieces (1/4 inch thick).
After about 5 minutes, when the onions are translucent, add the sliced potatoes to the fry pan and mix to coat in olive oil.
After about 5 minutes, when the potatoes are lightly golden, add 1 tsp of sweet smoked Spanish paprika and 3/4 tsp of ground cumin, mixing quickly.
Add 1/2 cup of tomato sauce and season with sea salt and black pepper, mixing well and simmering for a few minutes.
Drain 1 jar of cooked white beans and rinse them, then add to the pan along with 2 cups of vegetable broth and 1 bay leaf.
Turn the heat to high and mix gently until it comes to a boil, then lower the heat to low and simmer for about 10 minutes until the potatoes are cooked through.
Turn off the heat and squeeze in 2 tsp of fresh lemon juice, mixing well.
Transfer some of the beans into a shallow bowl and garnish with fresh parsley.
