Today, variations exist across Europe, with many countries adopting their own take on this satisfying meal, often pairing it with sauerkraut and dumplings for a complete experience.

Thaw the pork front leg in the refrigerator for over 24 hours.
Clean the surface of the pork to remove any hair or impurities with a sharp knife.
Soak the pork in cold water with 1 tablespoon of sugar for 1 hour to remove blood.
Chop onion into appropriate sizes and cut garlic to release its flavor.
Prepare a side dish with cabbage by shredding it thinly, washing it, and sprinkling with 1 tablespoon of salt to wilt it.
After the cabbage has wilted, squeeze out excess water and sauté it in a pan with a little vegetable oil, adding 2 tablespoons of oyster sauce and 1 tablespoon of vinegar, then stir-fry quickly to keep it crunchy.
Rinse the pork after soaking and place it in a pot, adding 500 ml of dark beer, chopped onion, garlic, black pepper, bay leaves, and enough water to cover the meat.
Boil the pork for 1 hour until cooked through.
After boiling, remove the pork and score the skin with a sharp knife.
Place the pork in an air fryer and cook at 180°C for 15 minutes, then flip and cook for another 15 minutes until crispy.
Plate the pork with the sautéed cabbage and serve.
