Spanish White Bean and Sweet Potato Stew

Heat a stock pot over medium heat and add 2 tablespoons of extra virgin olive oil (30 milliliters).
After about one minute, add 1 small finely diced onion, 1 finely chopped green bell pepper, 1 peeled and finely chopped carrot, and 4 roughly chopped cloves of garlic; mix continuously to prevent browning.
Sauté the vegetables for about 4 minutes until the onion is translucent and the other vegetables are lightly sautéed.
Add 1 teaspoon of sweet smoked Spanish paprika (2.30 grams) and 1 tablespoon of sherry vinegar (15 milliliters); mix well to coat the vegetables.
Add 1/2 cup of tomato sauce (115 grams) and simmer for about 4 minutes until slightly thickened.
Rinse 1 medium to large sweet potato under cold running water, scrub it clean, and cut it into small pieces about half an inch thick (1.25 centimeters).
Add the sweet potato pieces to the stock pot along with sea salt and freshly cracked black pepper; mix well.
Add 2.5 cups of cooked white beans (400 grams) and 3 cups of vegetable broth (710 milliliters) to the pot, along with 1 bay leaf; mix everything together.
Increase the heat to high and bring the broth to a boil, then cover the pot and reduce the heat to low medium, simmering for 15 to 20 minutes.
After about 18 minutes, check the sweet potatoes with a toothpick to see if they are tender; if the toothpick goes in easily, they are ready.
Remove the pot from heat, transfer some stew into a shallow bowl, and sprinkle with finely chopped fresh parsley.
