Cut the eggplant into rounds that are 1 cm thick.
Place eggplant slices on a wire rack with paper towels underneath and season with sea salt on both sides.
Let the eggplant sit for about 10 minutes to draw out moisture.
Chop one small onion and finely chop four cloves of garlic.
In a shallow bowl, crack two eggs, season with sea salt and black pepper, and whisk together.
In a separate bowl, add half a cup of all-purpose flour.
Heat a large fry pan over medium heat and add 1/3 cup of extra virgin olive oil.
Transfer the eggplant slices to paper towels and pat them dry.
Coat each slice in flour, then dip in the egg wash, and add to the hot oil in a single layer.
Fry the eggplant for 2 to 3 minutes per side until golden brown, then transfer to a dish with paper towels.
In the same pan, add the chopped onion and garlic and sauté for 3 to 4 minutes until the onion is translucent.
Add half a tablespoon of all-purpose flour and half a teaspoon of sweet smoked Spanish paprika, mixing continuously for 1 to 2 minutes.
Pour in half a cup of dry white wine and season with sea salt and black pepper, mixing well.
Simmer for 2 to 3 minutes, then add the fried eggplant back into the pan in a single layer.
Add 2 cups of vegetable broth and one bay leaf, bringing to a boil before lowering to medium heat.
Simmer for about 10 minutes to thicken the sauce, gently shaking the pan occasionally.
Remove from heat and serve directly from the pan or transfer to serving dishes, topping with chopped fresh parsley.
