Homemade Mustard

1/2 cup liquid (water, beer, wine, or champagne)
3 tablespoons apple cider vinegar
2 teaspoons salt

Start by powdering 6 tablespoons of whole brown mustard seeds using a spice grinder.

Add the powdered mustard seeds to a bowl with another 6 tablespoons of whole mustard seeds.

Crack open the whole mustard seeds without fully powdering them, using a quick blend in the spice grinder or a mortar and pestle.

Add 1/2 cup of liquid (cold for spicier mustard, warm for milder mustard) to the bowl and stir until well mixed.

Add 3 tablespoons of apple cider vinegar and 2 teaspoons of salt to the mixture and mix well.

Cover the mixture and place it in the refrigerator for 12 to 24 hours to allow the bitterness to dissipate.

After 24 hours, check the consistency and add more water if necessary to achieve the desired thickness.

Transfer the mustard to a mustard dish for storage.
