Combine barley flour, all-purpose flour, and salt in a large bowl.
Dissolve yeast and sugar in warm water and let sit until frothy, about 5-10 minutes.
Add the yeast mixture to the flour mixture along with olive oil and mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to 375°F (190°C).
Punch down the risen dough and divide it into equal portions.
Shape each portion into a bun and place on a baking sheet lined with parchment paper.
Cover the buns and let them rise for another 30 minutes.
Brush the tops with melted butter or milk and sprinkle with sesame seeds if desired.
Bake in the preheated oven for 20-25 minutes until golden brown.
Remove from the oven and let cool on a wire rack.
