Mexican Japanese Fusion, Chicharron Gyozas

Instructions
- 1Prepare the tomatillos by removing their husks and rinsing them under cold water.
- 2Boil the tomatillos in a pot of water for 10-15 minutes until soft.
- 3Blend the cooked tomatillos with jalapeños, onion, garlic, and cilantro until smooth.
- 4Heat vegetable oil in a skillet over medium heat.
- 5Add the blended sauce to the skillet and simmer for 5-7 minutes.
- 6Season the sauce with salt, pepper, and lime juice to taste.
- 7In a separate pot, heat the chicken broth until simmering.
- 8Add the pork chicharrón to the broth and cook for 3-5 minutes until softened.
- 9Combine the chicharrón with the green sauce in the skillet.
- 10Simmer together for another 5 minutes to meld the flavors.
- 11Serve hot, garnished with avocado, radishes, and fresh cilantro.
- 12Accompany with warm tortillas.

- ●2 cups all-purpose flour
- ●1/2 cup water
- ●1/2 tsp salt
- ●1 cup ground pork
- ●1/2 cup finely chopped cabbage
- ●1/4 cup chopped green onions
- ●1 tbsp soy sauce
- ●1 tsp sesame oil
- ●1/2 tsp minced garlic
- ●1/2 tsp minced ginger
- ●1 tbsp vegetable oil for frying
Instructions
- 1In a bowl, mix the flour and salt. Gradually add water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
- 2In another bowl, combine ground pork, chopped cabbage, green onions, soy sauce, sesame oil, garlic, and ginger. Mix well to combine.
- 3Divide the dough into small balls (about 1 inch in diameter). Roll each ball into a thin circle (about 3 inches in diameter).
- 4Place a small spoonful of the filling in the center of each circle.
- 5Fold the dough over the filling to create a half-moon shape. Pinch the edges to seal tightly, making pleats if desired.
- 6Heat vegetable oil in a large skillet over medium heat. Place the gyozas in the skillet and fry until the bottoms are golden brown (about 2-3 minutes).
- 7Add 1/4 cup of water to the skillet and cover immediately. Steam the gyozas for about 5 minutes or until the water has evaporated.
- 8Remove the lid and let the gyozas cook for another minute to crisp up the bottoms.
- 9Serve hot with soy sauce or your favorite dipping sauce.
