Pour in water and add the soaked beans, bay leaves, salt, and black pepper.
Bring to a boil, then reduce heat to low and cover; simmer for 1-1.5 hours until beans are tender.
If using chorizo, slice and add it to the pot during the last 30 minutes of cooking.
Check beans occasionally, adding more water if necessary to keep them submerged.
Remove bay leaves and stir in chopped parsley and lemon juice before serving.
