Chicken Chimichangas

4 burrito size tortillas
1 tsp. olive oil
2 cups Chicken cooked and shredded
4 tablespoons cream cheese
¼ cup salsa
2 cups Colby cheese shredded
½ tsp. ground cumin
1 tablespoon chili powder
½ tsp. salt
½ cup tomato sauce
1 tsp. dried oregano
2 cups refried beans

Preheat Oven to 400°F or 200°C.

In a medium-sized mixing bowl, combine shredded chicken, cream cheese, salsa, shredded Colby cheese, ground cumin, chili powder, salt, tomato sauce, and dried oregano to make the filling.

Spoon 2 tablespoons of refried beans in the center of each tortilla.

Add about 2-3 tablespoons of chicken filling into the center of the tortilla.

Fold the sides of the tortilla and roll them up from the bottom.

Place the rolled chimichangas seam side down on a baking dish.

Brush olive oil on top of the chimichangas.

Bake them for 20 minutes or until golden brown on top.
