Mix 1 cup of pre-cooked corn Masa with 1 teaspoon of salt and 1 cup of almost boiling water until hydrated.

Let the mixture stand for 10 minutes.

Roll the dough and cut into 5 or 6 slices, leaving a small piece to patch the arepas later.

Flatten each slice between parchment paper to about 1/4 inch thick.

Heat vegetable oil to 350°F in a deep pot.

Add a small piece of Masa to test the oil; when it floats, add the first arepa.

Fry the arepas until they open and create a pocket, adding oil on top to crisp the top.

Remove the arepas and let them cool on a rack.

Slice the top pocket of each arepa and slide in an egg, adding a pinch of salt.

Patch the opening with a small piece of Masa.

Return the filled arepa to the oil and fry for about 40-50 seconds, turning to cook both sides until crispy.
