Wash the rice at least three times without pressing or breaking the grains, just swirling it around to remove any powder.
Collect the starchy water for plants if desired.
For every 5 pounds of rice, add a handful of salt.
Add garlic paste to enhance the flavor of the rice.
Add 1 pound of butter to the rice.
Add a splash of olive oil.
Add a sprig of white onion for flavor.
Use double the amount of water for old rice, and three-quarters the amount for tender rice.
Place the rice in the center of the burner and cover it, cooking on high heat.
After 15 minutes, check that the rice is boiling evenly.
If the rice is boiling unevenly, adjust the pot's position on the burner.
Check if there is still water by using a ladle; if water still falls, leave it on high heat.
Once no water falls from the ladle, lower the heat completely.
Remove the sprig of white onion from the pot.
Check the rice to ensure it is dry; it should have tripled in size.
Leave it on low heat to finish cooking and fluff up the rice.
