1

Rinse 2 cups of pinto beans and cover them with about 6 cups of water, ensuring there's about 2 inches of water over the beans.

2

Add 1/2 teaspoon of salt, 2 bay leaves, and 1/4 of a yellow onion to the pot.

3

Bring the mixture to a boil, then reduce to a simmer and cover, cooking for about 1 hour.

4

Check occasionally to ensure there's still water in the pot.

5

After about an hour, drain the beans and remove the onion pieces.

6

In another pot, cook 6 slices of chopped bacon over medium heat for about 5-6 minutes until crispy.

7

Using the bacon grease, sauté 1/2 diced yellow onion and 3 teaspoons of minced garlic for about 4 minutes until translucent.

8

Add 1 cup of chopped beef sausage, 2 diced tomatoes, 1/2 teaspoon cumin, 1/2 teaspoon oregano, 1/2 teaspoon paprika, 1 diced serrano pepper, and 2 diced chipotle peppers in adobo sauce to the pot.

9

Cook the mixture for about 5 minutes to let the flavors meld.

10

Add the drained beans back to the pot along with 12 ounces of dark Mexican beer and 1/2 cup of reserved liquid from the drained beans.

11

Bring the mixture to a simmer and let it cook for about 20 minutes.
