Preheat the oven to 350°F.

Line a baking sheet with parchment paper.

Spread 2 cups of almond flour evenly on the baking sheet and toast in the oven for 12 to 15 minutes until golden, then set aside to cool.

Grease and line an 8x4 loaf pan.

In a bowl, combine 1/4 cup ground flax, 2 teaspoons baking powder, and 1/4 teaspoon salt, then mix and set aside.

In a large bowl, add 5 large eggs and mix for about 10-15 seconds.

Add 5 tablespoons of melted unsalted butter to the eggs and mix.

Add the dry ingredients to the egg mixture and mix until combined.

Transfer the batter to the loaf pan and smooth out the top.

Optionally, sprinkle 1 tablespoon of hemp seeds on top and gently embed them with a knife.

Bake in the oven at 350°F for 30 to 40 minutes.

For the blueberry chia jam, in a medium saucepan, add 1 cup of blueberries and 1/2 tablespoon of lemon juice, and cook for a few minutes until warm.

Add 1/4 teaspoon of cinnamon and mix.

Mash the blueberries slightly with the back of a spoon, cooking for about 5 minutes.

Remove from heat and stir in 1 tablespoon of chia seeds.

Let the jam cool in a container and refrigerate.
