Peel the potatoes and cut them into thick slices, at least half an inch thick.
Heat olive oil in a shallow pan over medium heat.
Shallow fry the potato slices one by one in the hot oil, ensuring they are not overcrowded in the pan.
Cook the potatoes until they form a thin skin, flipping them after about one minute.
Remove the first batch of fried potatoes and set them aside on a plate.
Remove excess oil from the pan, leaving about 1-2 teaspoons.
Add one chopped onion to the pan and sauté until golden brown.
Add three cloves of sliced garlic and a pinch of salt to help the onion cook faster.
Crumble two stock cubes into the pan for added flavor.
Prepare a cornflour slurry by mixing cornflour with a little water, then add it to the pan and stir quickly.
Cook paprika in the pan for about ten seconds, then add a splash of water and stir well.
Arrange the fried potatoes in the pan and add enough water to cover the potatoes without submerging them completely.
Let the potatoes cook for around fifteen minutes, allowing the water to absorb the flavors from the pan.
Once the water boils, gently flip the potatoes to distribute the flavors without breaking them.
Plate the potatoes in a nice-looking dish, garnish with chopped spring onions and a little more paprika powder.
