Preheat the oven to 400°F (200°C).
Wash and peel the potatoes, then cut them into bite-sized cubes.
Boil the potatoes in salted water until just tender, about 10 minutes.
Drain the potatoes and let them cool slightly.
Heat olive oil in a large skillet over medium heat until shimmering.
Add the garlic and sauté until fragrant, about 1 minute.
Stir in the paprika and smoked paprika, cooking for another 30 seconds.
Add the boiled potatoes to the skillet and toss to coat in the spice mixture.
Spread the potatoes on a baking sheet and bake until golden and crispy, about 20-25 minutes.
Once the potatoes are done, remove them from the oven and sprinkle with cheese.
Return to the oven for 5 minutes, until the cheese is melted.
