Potato Omelette

4 medium potatoes, peeled and thinly sliced
1 medium onion, finely chopped
6 large eggs
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh parsley, chopped (optional)

Heat the olive oil in a large skillet over medium heat.

Add the sliced potatoes and chopped onion to the skillet. Cook, stirring occasionally, until the potatoes are tender and lightly golden, about 15-20 minutes.

In a large bowl, whisk together the eggs, salt, and black pepper until well combined.

Once the potatoes and onions are cooked, drain any excess oil and spread the mixture evenly in the skillet.

Pour the egg mixture over the potato and onion mixture, ensuring it covers everything evenly.

Cook on medium-low heat for about 5-7 minutes, or until the edges start to set.
