Mango Salsa

2 ripe mangos, peeled and chopped to 1/2 inch cubes
1 cup jicama, peeled and chopped to 1/4 inch chunks
2 tomatoes, chopped to 1/2 inch pieces
1 yellow or red bell pepper, diced
small handful of cilantro, washed and chopped
2 jalapenos, seeded and finely chopped
juice from 1 lime
3 green onions or shallots, finely chopped
salt to taste

In a medium bowl, combine the diced mangoes and chopped red onion.

Add the minced jalapeño to the bowl.

Stir in the chopped cilantro.

Squeeze the lime juice over the mixture.

Season with salt and black pepper.

Gently toss all the ingredients together until well combined.

Taste and adjust seasoning if necessary.
