Peel the potatoes and wash them.
Cut the potatoes into cubes and place them into a large pot.
Rinse the potatoes and fill the pot with water.
Add kosher salt to the water and bring it to a boil on high heat.
Once boiling, reduce heat to medium-high and cook the potatoes until fork tender, about 20 minutes.
Drain the potatoes and return them to the pot.
Add 1/4 cup (4 tablespoons) of unsalted butter to the potatoes and mash them using a potato masher or fork.
Place the pot back on low heat and slowly mix in 1 cup of half and half using an electric hand mixer on medium low speed.
Add 2 tablespoons of full fat sour cream and whip for about 3 minutes until light and fluffy.
Add 1/2 teaspoon each of onion powder and garlic powder, kosher salt, and black pepper to taste, and stir in.
Taste the potatoes and adjust seasoning with more salt and pepper if needed.
Transfer the mashed potatoes to a serving bowl and add a pat of butter on top.
Garnish with chopped green onions before serving.
