¼ cup olive oil
2 tablespoons lemon juice
2 teaspoons of harissa or chilli
1 small clove garlic, crushed
1L of vegetable stock
2 capsicum, deseeds and cut into cuts
250g tomatoes, roughly chopped with skin and seeds
¼ cup quinoa (pre-cooked)
100g tinned organic kidney beans, drained and rinsed
½ cup celery, roughly chopped
1 cup baby spinach leaves
1 Spanish onion, finely chopped
1 garlic clove, crushed
1/3 cup chopped fresh mint, roughly chopped
1/3 cup chopped fresh coriander, roughly chopped
