Place 2 dried shitake mushrooms into a pan and pour over 500 g of cold water.

Heat the pan on the hob to a low simmer.

Once simmering, remove from heat and add a few strips of kombu to the shitake water and leave to cool, preferably overnight.

Strain the cooled stock through a sieve to remove the kombu and shitake, pouring 250 g into a mixing bowl for the marinade.

Add 250 g of soy sauce to the stock in the bowl.

Add 125 g of clear runny honey to the marinade mix.

Slice the green tops of spring onions and add them to the marinade.

Peel and finely mince half a white onion and add it to the marinade.

Dice red and green chili and add them to the marinade for heat.

Crush a few garlic cloves and add them to the marinade, using a microplane or chopping finely.

Dice the stalks of coriander and add them to the marinade.

Add toasted sesame seeds to the marinade and mix everything together.

Set the marinade aside until needed.

Salt a pan of water generously and bring it to a boil.

Gently lower in the eggs and cook over high heat for 6 minutes for a soft-boiled yolk.

Remove the eggs from the pan and refresh them in iced cold water to stop the cooking process.

Once cold, tap the eggs all over to break their shells and carefully peel them.

Place the peeled eggs into a clean sterilized jar, leaving structurally compromised eggs for the top to avoid damage.

Pour the marinade over the eggs to completely cover them.

Seal the jar and refrigerate for at least 24 hours, up to 5 days to marinate.

After marinating, carefully scoop the eggs out of the jar and observe the color change to beige light brown.
