Cheesy White Bean Tomato Bake

2 cloves sliced garlic
1 tablespoon olive oil
2 tablespoons tomato paste
1/2 cup vegetable stock
2 cans (15 oz each) canned white beans, drained and rinsed
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup mozzarella cheese
1/2 cup parmesan cheese
1/4 cup fresh basil, chopped (for garnish)

Turn on the cast iron skillet over medium to medium-high heat.

Preheat the oven to 450 degrees.

Add olive oil to the hot pan and let it heat up.

Add sliced garlic to the pan and sauté for about 30 seconds to a minute until golden brown.

Add tomato paste to the garlic and cook to caramelize it.

Pour in vegetable stock and mix everything together, reducing the heat slightly.

Add canned white beans, salt, and pepper to the mixture and turn off the heat.
