Tacos Al Pastor

Cultural Context

Tacos al Pastor originated from Lebanese immigrants in Mexico who brought the shawarma technique. The dish has evolved to include local ingredients, particularly the use of pineapple, which adds a unique sweetness. It is a popular street food in Mexico, often enjoyed with fresh toppings and salsas.

1

Make the marinade by blending 7 oz chipotle salsa, 1/4 cup chopped cilantro, 1 deseeded jalapeno, 1/2 quartered red onion, 8 cloves garlic, juice of 2 limes, and olive oil in a Ninja blender.

2

Trim silver skin off the pork tenderloin and cut it in half to allow more marinade to penetrate.

3

Place the pork in a Ziploc bag and pour the marinade over it. Seal and massage the bag, then refrigerate for 1 to 2 hours.

4

Prepare a dry rub with 1 teaspoon beef rub, 1 teaspoon garlic jalapeno rub, 1/2 teaspoon paprika, 1/2 teaspoon ancho chili powder, and cumin.

5

Cut the pineapple into wedges for grilling.

6

Fire up the Weber kettle grill with charcoal and set up for a two-zone fire.

7

Remove the pork from the marinade, shake off excess liquid, and season with the dry rub before grilling.

8

Grill the pork and pineapple until charred, flipping occasionally, until the pork reaches an internal temperature of 140°-145°.

9

Let the pork rest, then dice it and the grilled pineapple into small pieces.

10

Warm corn tortillas and assemble the tacos with diced pork and pineapple.
